Recipe Highlight: Sweet Potato Veggie Hash with Eggs!

Sweet Potato Veggie Vegetable Hash with Eggs breakfast lunch dinner recipe

We love a good sweet potato hash! We’d both agree - it’s one of favorites! You can find us eating this sorta thing at any time of the day - it’s easy to throw together, versatile, delicious, and really nutritious! Feel free to swap out veggies with whatever you have on hand! By the way, all the below measurements are pretty much guesstimates… do what you want, we do! You can’t go wrong. (And don’t think we’ll become food bloggers anytime soon!) Ha! ENJOY!

Sweet Potato Hash with Eggs (4+ servings)

Delicious and well rounded meal + super versatile to fit your taste! Add more or less of whatever veggie you like!

(Author note: I often have the veggies prepped and in my freezer, so when I want to make this dish, I just take them out of the freezer and toss them together on the stove.)

Hash Base:
4 slices bacon (or more), cut into 1/2-inch thick pieces (could also do diced breakfast sausage)
1 small onion, diced
1 red bell pepper, diced
1 large sweet potato, peeled and diced into 1/2-inch cubes (approx 4 cups cubes) (could also spiralize)

Add ins:
2 cups spinach or kale leaves, roughly chopped
1 small zucchini, chopped
6oz of mushrooms, sliced
(whatever you have on hand works!)

Eggs:
salt and pepper, to taste
4 eggs (or more)

Garnish:
avocado, peeled, cored and halved grape tomatoes
1 green onion, sliced
halved grape tomatoes
Tessemae's Creamy Ranch Dressing (optional, but yum!)
”Everything but the Bagel” seasoning is also delicious!

INSTRUCTIONS

1) Heat a large saute pan on medium heat. Add the bacon (or sausage) and saute until golden and crispy. Use a slotted spoon to remove the meat to a paper towel or small bowl. Leave grease in pan (dump some if there is too much). If you fried up sausage, add a little olive or avocado oil in the pan.
2) Add the diced sweet potato to the pan. Cook the sweet potato for 10-12 minutes, stirring often. Let the sweet potato crisp up. (Tip: if you're short on time, place diced sweet potato and other harder veggies in microwave for a few minutes to soften up, then place on stove)
3) Add the diced onion and red bell pepper to the pan with sweet potato and saute to soften until fork tender or softer.
4) While the sweet potatoes are softening and crisping up, take out another pan and spray or add butter or oil.
5) Crack your eggs and prepare eggs how you like them (I love over easy, runny eggs - but scrambled works too!)
4) Add the bacon back into the sweet potato pan along with the kale or spinach and stir for an additional 1-2 minutes or until the kale is wilted.
5) Remove the sweet potato hash and eggs from the heat. Season with salt and pepper and top with sliced green onion. Plate the hash with eggs on top and other garnishes of your choice. Serve immediately.
